2 cups flour
1 cup sugar
1 1/2 teaspoons baking powder
1/2 teaspoon cinnamon
1/2 teaspoon vanilla
8 tablespoons butter
1/2 cup evaporated milk
1 egg (beaten)
2 cups shredded coconut
1/2 cup raisins
Heat oven to 350 degrees F.
Combine all dry ingredients in a bowl.
Add butter 1 tablespoon at a time and cut in until flaky.
Add shredded coconut, raisins, egg, vanilla, and milk until dough is moist enough to hold together.
Shape dough into 1 1/2 inch balls and place 2 inches apart on a cookie sheet.
Bake on the middle rack of the oven for about 15 minutes or until golden brown.
Cool 5 minutes on cookie sheet, remove and finish cooling on a wire rack.
